An organic production in line with a nourishing soil

At the winery, humans take care of the soil and the soil nourishing the vines in a balanced way. All our wines are producted by organic farming. The compost is prepared on site and is made from cattle and sheep manure. It enables a balanced and sustainable development of the soils. Another unique feature of the Aspras is that on part of the land the vines are harvested and prepared on horseback. A few sheep naturaly weed the vines. It is with the same requirement and respect that Robert Nourrisson, our winemaker, enhances the organic grapes in his cellar to enable the « terroir » to express itself.

Une vinification innovante pour que le vin raconte son histoire

Dans la cave, les savoir-faire traditionnels – utilisation de cuves en béton et de barriques de chêne – côtoient les technologies les plus avancées : pressoir pneumatique, système d’éraflage innovant, contrôle précis des températures de fermentation par le froid des rosés et des blancs.
